An AIP July 4th picnic doesn’t have to be boring!

The family is all geared up to celebrate 4th of July with a picnic of big fat sandwiches with loads of goodness that are not on my diet, salads I can’t eat, cookies (NO again) and some adult beverages (nope). I refuse to not be included in the goodness. I put together my own AIP July 4th picnic with a couple of recipes I found, a couple I created with a few added extras.

Deviled eggs with pickled onions

Cucumber and cilantro salad

AIP Cheese

Lunchmeat and prosciutto

Pickled Onions

2 red onions sliced

Apple cider vinegar to cover

One to two stems fresh rosemary

Salt and pepper to taste.

Place the sliced onions in a jar. Pour enough apple cider vinegar to cover all the onions. Add the fresh rosemary leaves, salt and pepper. Place the lid on the jar and give it a good shake to evenly distribute the rosemary. Place on the counter overnight then refrigerate. They are good right away but are even better after a couple of days. They are good on sandwiches and deviled eggs.


Deviled Eggs (an AIP reintroduction food)

12 large eggs

1/2 cup paleo mayonnaise

1-2 tsp mustard (added to taste)

1 tsp apple cider vinegar (added to taste, you may need s little more)

1/4 cup chopped pickled onions

salt and pepper to taste

Place the eggs in a pan and cover with water. Bring the water to a slow boil. If it gets too hot the eggs will crack open. Turn the burner off, remove from heat, place a lid on the pan. Let set for 20 minutes.

Peel and cut the eggs in half. Place the yolks in a bowl and add the remaining ingredients. Mash them up and use as s filling for your eggs. Refrigerate


Cucumber Salad

2 firm cucumbers peel on or off and cut into slices or cubes

1/4 cup cilantro

2 scallions

Stonewall Kitchen Cilantro Lime Dressing


AIP Cheese

I used the recipe from A Squirrel in the Kitchen. There is also one for a cheddar tasting AIP cheese  by The Spunky Coconut. If you can add the nutritional yeast I recommend it.


Add some *Dietsel Roasted Deli Sliced Turkey or grill a turkey breast and slice it up, some fruit, some AIP pickles, olives and prosciutto (make sure it has pork and salt only) add some avocado and you have a glorious picnic!
