Following an AIP diet seems to be one of the hardest things to start.
It’s confusing and can be overwhelming. Then once it finally becomes second nature you get stuck with a few recipes because you’re feeling better and don’t want to risk a mistake.
Starting today I’ll have weekly AIP Recipe Monday ideas. There are great resources out there and you can find a few of them on my recipe page. What I’m hoping to do on Mondays is to give you quick specific recipe ideas with links from the resource they come from so you can find more if you’d like.
This salad is easy and so good. It was a huge hit with my family. Initially I thought I would be the only one eating it but enough can’t be made for everyone! To save time I used a store-bought paleo mayonnaise.

One of my favorite salad recipes, Crunchy Red Cabbage and Kale Salad, comes from Sophie Van Tiggelen’s cookbook Simple French Paleo, a go to book in my home. This recipe is also one of Sophie’s. Her recipes tend to be extremely good and easy to prepare.

An Amazing rub that is fantastic on pork tenderloin or chicken. We use it on meat for the grill or oven. It’s a recipe that our guests ask for when we serve it. It’s also very easy a to make and store.
For dessert A homemade Popsicle!
The great thing about this list of recipes is that there are usually leftovers that will make a couple of time-saving lunches.
