This time of year is hard for me. My husband loves a bowl of vanilla ice cream when it’s hot out and I just sit there wishing I could have some of it. Just one bite, I’m sure it will be fine… oops I ate a bowl now I feel AWFUL…for days. This really happened I’m sorry to say I have no self-control sometimes.
I’ve been making popcicles lately (after that happened) and they fill the gap! I found this book Glow Pops by Liz Moody. Her recipes are good for you and absolutely delicious as well. There is no giving up taste to be healthy here.
This is one of her recipes. She says this often winds up being people’s favorite Glow Pop. My next favorite is Rosemary Strawberry and the next one for us to try is Honeyed Peach Thyme.
2 cups full fat coconut milk
6 Medjool dates, pitted, soaked in boiling water for 10 minutes and drained
1 tablespoon ground cinnamon
1 tablespoon pure vanilla extract
pinch of salt
1. Blend together all the ingredients until smooth
2. Pour the mixture into pop molds and freeze for 1 hour, then insert sticks and freeze for at least 4 hours more or until solid.
Now if anyone has a substitute for a good beefy hamburger on a bun when you can’t seem to eat any grains I’d love to hear it! please!
